Our Aceto Balsamico Riserva is made from carefully selected cooked grape must. It then ages for at least seven years in small barrels of different woods.

Year after year its character changes: it becomes denser, more aromatic and develops an extraordinary depth. The result is a harmonious, balanced balsamic with natural sweetness, soft notes and an intense, characteristic scent. Because a good balsamic doesn’t need much to be special.

History of balsamic

A story going back centuries

The tradition of balsamic vinegar from Reggio Emilia dates back to the Middle Ages. Even then, cooked grape must was stored for many years in small wooden barrels and slowly refined.

One of the oldest known mentions comes from the 11th century: Donizone, biographer of the famous Matilda of Canossa, reports a “most perfect vinegar” from her estates, given as a gift to a future emperor.

For centuries this precious vinegar was cared for and passed on by noble families and monasteries – as a delicacy, a valuable gift and an expression of deeply rooted craftsmanship.

Today Aceto Balsamico di Reggio Emilia stands for tradition, craftsmanship and the special art of creating something extraordinary out of time.
